Much acclaim was accorded to Hawks­worth (Gold), but Blue Water (Silver) remains, said one judge, “the place to take out-of-town guests, with a stellar raw bar and Frank Pabst’s definitive take on miso sablefish.”

Diva at the Met (Bronze) has won new converts with Hamid Salimian’s daredevil cooking; sit at the bar and watch chef concoct playful snacks: a fragment of chicken-skin bacon, bone marrow custard in eggshells in a nest, or quince paste with a foie gras walnut.

Honourable Mentions to authentic, hedonistic Cioppino’s, and to West, where chef Quang Dang is bringing in some of the world’s great chefs and re-establishing a long-loved room.
