Unanimous praise—"The odd bits rule!"—came from our judges for Gold-winning Wildebeest. Roasted bone marrow with almond butter and tomato jam finished with a sherry "luge," and long-pepper-scented oats with pork and maple syrup add up to "the most exciting dining experience in the city."
At La Pentola della Quercia (Silver) in the Opus Hotel, "la famiglia-style food-like luscious smoked veal tongue with salsa rosa-is perfectly wrought."
Farm to table goes a step further at Forage (Bronze), where the eco-minded chef turns out addictive snacks like duck-fat popcorn with pork crackling.
