A more modern take is found at the hillside gem that is Fraîche (Silver), where Dino Renaerts has put his stamp on the elegant room with note-perfect flavours shining through dishes like mushroom velouté and pan-seared steelhead with braised pork belly. Then there are the tight fusion rolls and impeccable service at West Vancouver’s Zen (Bronze), our first OceanWise sushi room. Honourable Mentions to Gusto di Quattro, with its famous grilled bocconcini in radicchio and knockout spaghetti Quattro, and to The Observatory, whose “tourist destination” status has been laid to rest by chef Dino Gazzola.
