What record stores were in the ’90s-obsessive, exquisitely curated-cafés are today. It was in celebration of this geek-chic moment that we introduced this category, topped by slow-brew leader Revolver (Gold), where process and product are inextricably linked. North American micro-roasters switch through in the back; hipster magicians conjure rounded, deep coffee out front.

In-house roasting is the base of success at 49th Parallel (Silver), which stands out for an impressive bean selection and Lucky’s Doughnuts, the heaven to which deserving espressos aspire.

Bronze to Thomas Haas, well-known pâtissier, roaster and supplier of generously flavoured cafés au lait.

Honourable Mentions to Clover machine innovator Elysian and to master chocolatier Thierry Busset’s jewel of a room.
