It’s a testament to how global the world has become that one of the undisputedly great French chefs working right now hails from the oh-so-Gallic city of…Singapore. By the numbers, Chef Julien Royer’s Odette restaurant is impressive—it was named the ninth best restaurant in Asia according to the gang at San Pellegrino and garnered two Michelin stars. But Royer represents one of the great pluses to being a French chef working in a foreign locale: you get all the technique and precision and none of the stuffiness.

So, that’s reason enough to beat a path down to the Fairmont Pacific Rim this Thursday to snag one of the last tickets to see him cook alongside Botanist restaurant‘s Hector Laguna.
