The Best Thing I Ate All Week: Grapefruit-Rhubarb Pie from The Pie Shoppe

Have you ever wondered, “What does a dream taste like?” Have you ever laid awake at night, wishing you knew the flavour profile of happiness? Have you fantasized to yourself, as you soaked up the sunshine in the park on a warm May afternoon, about biting into a cloud?

I have excellent news, my friends: all of these fantasies can now be realized via a slice of pie. The rhubarb, grapefruit and ginger compote pie from The Pie Shoppe is made with buttermilk custard and an Island Farms whip topping, and it can only be described as heavenly. Tangy and light and flaky and creamy: what’s not to love? I tried it for the first time at the snack table at a press conference and then ran back to the office to spread the news about this magical dessert, basically completely forgetting the event I was actually supposed to be covering. Sometimes being a journalist is hard, you guys.
