Araxi Restaurant sets the pace in the farm-to-table movement with their signature summer Longtable Dinner Series.
It doesn’t get more fundamentally farm-to-table than serving 300 dinner guests, quite literally, in the middle of a farm.Recognized as a leader in the all-local, all-organic movement since long before the trend’s recent takeover of British Columbia’s culinary scene, Araxi Restaurant’s Executive Chef James Walt is taking the sustainable, community-first concept a step further with this summer’s Longtable Dinner Series.The signature events continue Saturday, September 5, with the largest seating yet in Pemberton’s North Arm Farm, twenty minutes outside of Whistler. 300 dinner guests—approximately double all previous Araxi Longtable events—will be served a locally sourced 4-course meal based on Araxi’s long standing partnership with Jordan Sturdy of North Arm.The event begins with a 3pm reception where attendees can meet the farmers and suppliers, and tour the organic fields from which dinner ingredients are picked just a few hours prior, before tucking into a decadent family-style dinner framed by Mount Currie and the wide open skies of the Pemberton Valley.Chef Walt’s progressive culinary vision made him a pioneer in farm-to-table dining long before it became the standard for contemporary West Coast cuisine. His position at Araxi, a cornerstone of the Whistler Village, affords Chef Walt and his team incomparable access to the splendours—and beauty—of some of B.C.’s most envied landscapes.The September 5th event will feature organic spirits from the Pemberton Distillery, showcasing their shared ethos for hands on quality, while Araxi Wine Director and British Columbia’s 2013 Sommelier of the Year, Samantha Rahn, pairs wines from the Okanagan Valley’s La Stella and Le Vieux Pin to reflect the delicious flavours of Chef Walt’s menu.
