Mutabal, a baked eggplant dip with olive oil and a sprinkle of ground sour-berry sumac, will whet your appetite. At lunchtime there’s sambusec, a baked flatbread pocket filled with chicken, beef, spinach, or cheese. Roasted free-range chicken is well seasoned and invariably fork-tender, served with freekeh (toasted green wheat with almonds) or mujaddarah (rice and lentils with caramelized onions).
