Chef Jefferson Alvarez breathes new life into this ultra-chic white-on-white room with his imaginative, modernist creations. His adventurous seasonal menu skillfully weaves influences from his Venezuelan heritage together with a bounty of locally grown and foraged ingredients and techniques from stints in high-flying kitchens such as Arzak, Mugaritz, and Aquavit. Pastry chef Kira Desmond’s deft interplay of texture and flavour marks beautifully composed desserts.
