Chef Takashi ItoÑformerly of Fairmont EmpressÑhas refocused the menu of this chic dining room. Grab a seat on the heated waterfront patio for half-shell oysters, or burgers and fish and chips. The dinner menu (which changes seasonally) dazzles, and it’s where Ito’s confidence in modern cuisine using classic Japanese techniques and ingredients really shines. Excellent wine list is thoughtfully chosen and minimally marked up.
