The ice cream comes in reusable glass jars, ingredients like rhubarb and basil are sourced from local farmers, there’s cult coffee from local roasters Matchstick, and the Fraser Street location is so of-the-moment—and only open four days a week (Thursday to Sunday). It could all be too much. But Earnest’s saving grace is that its name is no wink-wink it’s a fair description of proprietors dedicated to making amazing ice cream and then selling it at a price not much higher than the mass-produced stuff in the freezer aisle. Sure, there are often line-ups, but they’re well earned.
