When this noodle shop first opened in Aberdeen Mall, lineups were topping out at two hours for bowls of award-winning Taiwan-style beef noodles. The initial frenzy has subsided, and it’s worth waiting in the moderate queue to sample the glorious beef shank noodles that come with meltingly tender shin, a slow-cooked broth (gloriously MSG-free), and wonderfully buoyant and chewy hand-made flat noodles. The Taiwanese love little side plates and snacks spinach-like chopped ma-lan with tofu, and marinated beef wrapped in crispy pancake, are top notch.
