VANCOUVER ISLAND

CHOCOLATE TOFINO
Chocolatier Gordon Austin complements the area’s best restaurants with pure and deceptively simple flavoured truffles. A wildflower honey ganache is sleek and expertly textured. Clayoquot blackberries and chocolate is a luscious treat. House-made gelatos inspire surfers to perform back-flips. 1180 Pacific Rim Hwy., Tofino, 250-725-2526.

HOT CHOCOLATES/CAKEBREAD
Exquisite chocolate truffles, fudge and nut barks are made on-site. Equally perfect in one-note flavours as they are in visionary combinations—salt with caramel or lemon grass with kaffir lime, two such visions—all are exquisitely packaged. On the opposite side, cakes and tortes go multi-layered, and breads are strictly artisanal. 238 5th St., Courtenay, 250-338-8211 or 866-468-2462.

ROGERS CHOCOLATES
Seducing chocoholics since 1885. The real jewel is the Empress Square, a chewy mix of caramel and roasted almonds covered in dark chocolate. A line of dark chocolate bars delivers sophistication with 72 percent cocoa, orange peel and chipotle. 913 Government St., Victoria, 250-727-6851; and several other locations.
